5 Easy One-Pan Dinners – JSHealth

One-pan meals have always been a JSHealth classic. They’re easy to make without sacrificing on flavor or nourishment.

Simply load up one pan with wholesome ingredients, let the oven or stovetop do the work, and you’re left with a meal that’s as good for your body as it is for your evening. Less cleanup, more time to actually enjoy what you’ve made — this is the type of cooking I truly love!

I’ve rounded up my go-to recipes for when you need dinner in a flash. From my kitchen to yours…

One-Pan Red Salmon Curry

Salmon is one of my favorite sources of omega-3s and this nutritious coconut curry makes it easy to enjoy on a weeknight. Finished with fresh lime, herbs, and crunchy peanuts, this recipe is equal parts satisfying and effortless.

One-Pan Mediterranean Gnocchi

A plant-forward bake built around colorful, fiber-rich vegetables, Mediterranean flavors, and golden gnocchi. It’s delicious served on its own or paired with the honey-mustard salmon for an extra boost of protein. Cozy, comforting, and ready with barely any washing up.

10-Minute Prawn Curry Noodles

A weeknight hero among the JSHealth community, this one keeps coming back into the rotation for good reason. Packed with cruciferous veggies and antioxidant-rich capsicum alongside prawns (you can swap out the prawns for tofu, or any protein of your choice). Ready in just 10 minutes, it’s the recipe you’ll be making on repeat.

One-Pan Roasted Pumpkin Soup

This nourishing soup makes healthy eating feel uncomplicated. Roasting the vegetables together creates a deep, warming flavor, while cannellini beans add plant-based fiber and protein. Be sure to serve with crusty sourdough (so yum). It’s an ideal meal-prep option too — freezer-friendly and just as delicious reheated.

One-Pan Mediterranean Chicken

Fuss free and nutrient packed! Juicy chicken thighs cooked in warm spices bring the protein, while chickpeas add fiber for extra nourishment. Roast everything on one tray with colorful Mediterranean vegetables for a hit of antioxidants, drizzle with olive oil, and bake. Serve with a dollop of herby, gut-friendly Greek yogurt and brown rice or your favorite grain.

Let me know which one you make first!

Enjoy,
